Kids Clothes Week Challenge Fall 2012

Did anybody else complete the challenge? I’d love to see what everyone made!

Ok, so not clothes, but accessories count too right? I made this purse as a birthday present for my daughter. It didn’t take long, and I think it’s super cute! (The angle of the picture makes the top look a bit crooked, but it’s not really 🙂 )

Make it yourself: Buttercup Bag Sewing Pattern

Finally, I made this beautiful cape! I thought it would be so cute to have a 2 year old in some old-time fashion! So, I decided to make my own twist on Little Red Riding Hood’s cape… I actually used a Little Red Riding Hood costume pattern to create this

Here’s the pattern I used: Simplicity 2571

I did include a lining in mine. Basically, to do this, you’ll want to cut out and sew 2 capes (one lining and one with the outside fabric.) You’ll then line them up, right side together, and pin. Sew the 2 pieces together along the outside, leaving a small opening. Turn right side out, and sew the opening shut. It was the first time I’ve sewed a lining into something so large. I was intimidated at first, but it ended up being a lot easier than I originally thought it would be. I also sewed a button closure instead of the recommended ribbon/tie closure.

So, there you have it! Got a lot accomplished, and I still have a few things left on my list to work on! Maybe I’ll get a few things done this week too 🙂

Kids Clothes Week Challenge!!

A Word on Homeschooling….

Actually, I suppose I could title this post “A Word on Teaching” or even “A Word on LEARNING”.

Recently, we began “toddler school” for our nearly 2 year old daughter. Basically, it has been an introduction to colors, shapes, letters, and numbers. In my research, I came across people asking, “If you start schooling that early, then what will they learn in kindergarten?” I’ll use this post as an opportunity to provide my personal answer and opinion on that matter.

In the last 4 weeks, I have discovered what a sponge a 2 year old’s brain truly is. They are aching to learn, to discover new things, to soak it all up. I am truly amazed at just how much Linnaea has learned in such a short period of time. She begs me every day for “school, school, school!!” She is anxious and excited to see what we’ll be learning about that day. Why not take advantage of that? Why not fill that sponge? She’s learning from a young age that school is great, learning is FUN, and it gives me great hope for the future.

Now, I’m not saying that everyone should sit their child down for a strict 8 hour school day. We simply set aside 20-30 minutes a day. We learn through playing, coloring, finger painting, and other creative little projects. We also sneak in some learning when she’s playing throughout the day. We use her toys, draw pictures, and point out letters in books that she knows. I’ll get more into our schedule and tools we use to learn at a later time…

Now, back to the original question, “What will they learn in Kindergarten?” Now, correct me if I’m wrong, but I am pretty sure that kids are supposed to know their alphabet and numbers, etc. before entering kindergarten. If I am wrong, then your child will be ahead of the curve! This is the beauty of homeschooling, learning can be at your child’s pace. If, by the time Linnaea is of Kindergarten age, she has already learned and mastered all of the kindergarten criteria, then we move on to 1st grade curriculum. It’s that simple! I have always thought that that is one of the magical things about homeschooling. I was always ahead of everyone throughout school, I got bored easily and craved a challenge. In a home school atmosphere, once a child has mastered a topic, then you move on to the next. There is no class to wait for to catch up. There aren’t 29 other kids with questions. Your child is the focus. And the opposite is true as well– should they need a little extra time on a topic, you can give them that extra time. You’re not slowing down an entire classroom. Your child is learning at THEIR personal pace.

Ok, perhaps I got a little off path, but you can see what I’m saying. Don’t let comments like these stop you from starting to teach your child early. They want to learn so badly! Their little brains are just waiting to be filled with information. Take advantage!! You’ll be amazed, I promise.

Chicken Mango Kabobs

This whole summer has flown by in the blink of an eye!! I can’t believe it’s Fall already! But, if you’re still able to find some yummy looking mangoes at the store, then you MUST try this recipe! My husband is doing P90x and is subscribed to the email newsletters. A few weeks ago he received an email with this recipe in it, and we just had to try it. I can only describe them in one word– DELICIOUS!! They are spicy, sweet, tangy, a great mixture of flavors that will leave you craving more!

Chicken Mango Kabobs

  • 1 tsp. lime rind, grated
  • 1/4 cup lime juice
  • 2 Tbsp. vegetable oil (plus extra to grease grill surface)
  • 3 cloves garlic, minced
  • 2 tsp. chili powder
  • 1/2 tsp. salt
  • 1/4 tsp. cayenne pepper
  • 3 chicken breasts, boneless and skinless, cut in 1-inch chunks
  • 2 tsp. honey
  • 2 mangoes
  • 1 sweet red pepper, cored, seeded, and cut into 3/4-inch pieces
  • 1 small red or sweet onion, peeled and cut into 1-inch chunks
  • Medium bowl
  • Large bowl
  • 8 skewers
  • Brush for marinade

Light charcoal grill or preheat gas grill. In a small bowl, create marinade by whisking together lime rind, lime juice, oil, garlic, chili powder, salt, and cayenne pepper. Place chicken chunks in large bowl. Pour half of marinade over chicken, toss to coat, and let stand for 20 minutes. Stir honey into remaining marinade, cover, and refrigerate until needed. Cut mango flesh from each side of pit. Cut mango flesh in a grid pattern of 3/4-inch squares down to but not through the skin. Gently push skin to turn inside out and cut off the flesh. Alternately thread mango, pepper, onion, and chicken pieces onto each of 8 skewers. Brush with half of the reserved honey marinade. (Discard marinade that chicken soaked in.) Lightly grease grill surface and place kabobs on it over medium-high heat; close lid and grill, turning and basting kabobs once with remaining honey marinade until fruit is softened and chicken is browned and cooked through (with no pink inside) and juices run clear (about 8 minutes). Makes 4 servings (2 skewers each).

Preparation Time: 40 minutes

Cooking Time: 8 minutes

And even better, they are high in protein and low in calories and carbs. Nothing like a delicious meal that’s healthy too!
**Note** Don’t forget- if you use bamboo skewers, you MUST soak them in water first! Otherwise they will catch fire on the grill… Guess who forgot to soak the skewers– yep, that would be me. Ours still turned out tasty though, our skewers where just a touch burned. lol.

Low Carb, Gluten-Free, Spinach Quiche!

I follow the blog Frugal Feeding, and am always finding delicious things that I’d love to make. This particular recipe was just too good to pass up. I’d been looking for a good quiche recipe, and couldn’t have asked for a better one to meet my dietary requirements. AND it’s delicious too! Even Linnaea chowed down on some (and she’s a picky 2 year old!)

Because his blog is out of the UK, I thought I’d help you all out a little bit and convert some of the measurements 🙂 To see the original recipe, go HERE

Crustless Spinach and Ricotta Quiche

Serves 4

Ingredients:

• 10oz fresh spinach

• 2 cloves of garlic, crushed

• A little olive oil

• 1/2 cup heavy cream

• 8oz ricotta cheese

• 2 eggs, beaten

• Salt and pepper

Method:

1. Preheat the oven to 400F. Fry the garlic in oil in a large saucepan. Add the spinach and cook until wilted. Beat the eggs, cream and cheese together in a mixing bowl until combined. Add the wilted spinach and season.

2. Transfer the spinach and cheese mixture to a buttered quiche dish and bake in the oven until just set. This should take around 20-25 minutes. Once cooked leave to cool for 2 minutes before very carefully slicing.

Wow, sorry it has been so long since my last post! We have been busy, busy, busy, and I haven’t been feeling too hot. But now I am back with a great post! I have compiled a list of great homemade household cleaner recipes. With a toddler running around, the importance of having a natural/homemade cleaning aid is a concern- there are just too many harmful chemicals in the stuff you buy at the store. Broccoli Salad- With Walnuts and Grapes

I’m back!! We finally got all the kinks worked out, and I’m back to blogging. I have a SUPER yummy recipe to share with you today.

While we were visiting my parents in Missouri, we had this delicious broccoli salad. I have been trying to recreate something similar to it (with my own twist) since we got back home. What I ended up with isn’t exactly like what we had, but it is pretty darn yummy! Here’s what I did…..

Broccoli Salad

1 large head of broccoli
1 cup mayo
2 Tbsp spicy mustard (I actually use a little more because I like the taste of mustard)
1 Tbsp lemon juice
A dash of Cayenne pepper
1/4 Walnuts, chopped
Red grapes
 
Finely chop the broccoli. I run mine through the food processor- fast and easy! Pour into bowl. Add mayo, mustard, lemon juice, and cayenne. Mix well. Add walnuts and grapes, mix again. Serve.
 
***Please add to, or take from, this recipe as you wish. I am not 100% positive on all the measurements I used because I sort of add things, taste, add some more, etc. I will edit the post next time I make this salad to get more accurate measurements- I was just too excited to share it with you all! Enjoy!!

Low Carb Peanut Butter Cookies!

I needed a quick fix for my sweet tooth, and these cookies hit the spot! They are a bit crumbly, but taste a lot like a real peanut butter cookies. I used stevia instead of Splenda, but I imagine they’d taste great either way. Enjoy!!

Peanut Butter Cookies

1 cup creamy or crunchy peanut butter
1 1/3 cups granular Splenda or equivalent liquid Splenda or Stevia
1 egg
1 teaspoon vanilla
Extra granular Splenda for fork

Line a large baking sheet with parchment paper. Combine all of the ingredients in a small mixing bowl; beat well with a spoon until it becomes a thick dough. Gently roll into 20 balls and place on a baking sheet. Or, use a 2-teaspoon cookie scoop to evenly measure the dough. Dip a fork in granular Splenda and make a criss-cross design by gently pressing into the balls of dough in alternating directions. Be gentle and dip the fork into Splenda frequently because the dough is very sticky. Bake at 350 for 12-15 minutes. Cool before removing from the baking sheet. Store in the freezer and do not thaw before eating.

Makes 20 small cookies
Can be frozen

With granular Splenda:
Per Cookie: 81 Calories; 6g Fat; 3g Protein; 4g Carbohydrate; 1g Dietary Fiber; 3g Net Carbs
Per 2 Cookies: 162 Calories; 12g Fat; 7g Protein; 8g Carbohydrate; 1g Dietary Fiber; 7g Net Carbs

With liquid Splenda:
Per Cookie: 75 Calories; 6g Fat; 3g Protein; 2g Carbohydrate; .5g Dietary Fiber; 1.5g Net carbs
Per 2 Cookies: 149 Calories; 12g Fat; 7g Protein; 5g Carbohydrate; 1g Dietary Fiber; 4g Net Carbs

** I definitely recommend freezing these cookies after you make them. When frozen, they hold together much better.

Traveling With Your Toddler

 

We got back from our road trip to Missouri late Thursday night, and I learned a LOT about traveling with a toddler. I’d like to share a few things with you in the hopes that your future travels with a little one will be successful!

  • Bring a portable DVD player- This one was HUGE for us. Linnaea doesn’t typically watch a ton of TV, but the DVD player and her favorite movie was a life saver for us. It really helped distract her from the fact that she had to sit in her car seat for 14 hours.
  • Bring Snacks- I kept a supply of Linnaea’s favorite snacks in the front seat with me, that way I could hand her things as we were driving.
  • Bring your little one’s favorite lovey- Linnaea is attached to her blankie. It’s SO important to grab whatever toy/stuffed animal/pacifier/etc that your child is attached to.
  • Coloring books- To keep things clean, I handed Linnaea a coloring book and would give her a couple crayons at a time. I switched out colors occasionally, and she was happy as could be.
  • Fun kid’s music- Bring along a CD of fun songs that your kids want to listen to
  • Stop to stretch often- Your toddler will be much happier if you let them stretch their legs often. We stopped at several rest stops along the way and took short walks with Linnaea.
  • Bring along new/different toys- We were able to borrow a few toys from a friend, and these were a huge hit! Linnaea showed interest in them longer because they weren’t the same old toys that she’s used to playing with daily.
  • Bring a small stash of medicines- Tylenol/allergy meds/band-aids/etc…. We learned this one the hard way. When we got to Missouri, it turned out Linnaea was teething and we had to go find teething meds. It would have saved us some hassle if we would have packed a few items.
  • Change of clothes- Put a change of clothes in the car. Linnaea got car sick along the way and we were left digging through the trunk for her clothes. It would have been much easier had a tossed an outfit in the back seat.
  • Diapers- Keep a stash of diapers/wipes/changing pad easily accessible. Or, if your kiddo is potty trained, make sure you are stopping frequently for potty breaks.
  • When to travel- Make sure you are positive that your child will sleep through the night in their car seat before deciding to travel at night. We thought night travel would be easiest because we assumed Linnaea would sleep the whole way. Boy were we wrong. She only slept one hour the entire way to Missouri. That made for a rough first day there. On the way home, we traveled during the day and she did MUCH better.

Low Carb Recipes

This is going to sound a little strange…. after much research I have finally found a low carb substitute to use in place of MANY things. I know, you’re all anxiously waiting on the edge of your seat to find out what this miracle ingredient is. I’ll tell you one thing, it’s nothing you’d ever expect. The one thing that you should always have in your house (to help make your low carb diet successful) is…… PORK RINDS!!

Crazy, right? They have zero carbs and virtually zero flavor, and they make for a great secret ingredient in some unexpected places.

Here’s just a few of the recipes we’ve tried using pork rinds–

Breading Chicken- Crush your pork rinds and use as you would use breadcrumbs on chicken

Meatloaf– Use in place of breadcrumbs

Pancakes– Yep, I said it, pancakes. It’s tough to get past the idea of eating pork rinds in your pancakes, but it’s actually quite yummy. I follow this recipe.

Pizza Crust– I’ve been searching high and low for the perfect low carb pizza crust, and I think this one may be it! I use this recipe

And there’s many more that I haven’t tried yet. Cheesecake crust, nachos, bread pudding, believe it or not the list goes on and on. Let me know what you’ve tried and how you like it!!
